Now here's a neat trick: Transforming the humble tamale into a work of art. The gang at Tucson Tamale Company didn't just settle on serving up green corn or red chili tamales. They use that masa base to create culinary masterpieces, filling them with everything from Italian sausage to curry and potatoes. It's a sad day at the Sabino Bureau when we look in the freezer and realize we've run out of our tamale stock.
