This semi-legendary dish—which has been satisfying Italian-food-craving Tucsonans for more than a half-century now—couldn't be any simpler. The skilled cooks at Mama Louisa's take their fresh, homemade linguine, and mix in garlic and red-pepper flakes. Then they cover it with a special blend of melted cheeses and their oh-so-savory marinara sauce. The result ... well, it couldn't be any more delicious. It's not that bad for you (as far as Italian food goes); it's vegetarian; and it's cheap—it'll set you back less than $10 for the entrée, and is also offered in various Mama Louisa's combinations.
