Tacos Apson is an absolute gem, and you'll see why immediately once you post up at the counter in front of the grill and griddle. Rustic costillas, crispy tripa, spiced al pastor tacos and more are all served simply—just a corn or flour tortilla and your selected meat. You can dress your tacos up at the salsa bar, but, honestly, the meat at Apson is cooked so perfectly (partly because of the well-seasoned grill) that it really doesn't need anything other than a squeeze of lime.
